Our sofrito is made as it’s done at home: ground tomato, very lightly cut onion, pepper and, of course, a measure of good, golden olive oil. The result is obviously delicious.
Fideuá is a very typical paella in the east coast of Spain. It is done with noodles instead of rice, and it’s very easy to prepare, however, mastering its secrets to achieve the perfect Fideuá is a matter of great experience. A rich seafood broth, and a little bit of seafood is enough to get this special paella running, but each one of the regions where it’s done has got its own recipe and secrets.
