Our sofrito is made as it’s done at home: ground tomato, very lightly cut onion, pepper and, of course, a measure of good, golden olive oil. The result is obviously delicious.

This paella, cooked only with vegetables and mushrooms, has a delicate but complex flavor, with all the nuances that ingredients such as the artichokes, asparagus and Boletus.
This rice is an excellent variation to the always popular seafood paella (arroz de pescador) or the mar y montaña paella, always present at the Spanish family’s table on Sunday, and undoubtedly, it surprises with its delicious taste and outstanding looks, in part due to the artichoke, which dye the rice with an intense, very attractive color.
